Bunny Pancakes

Bunny pancake with blueberry eyes and saltwater taffy whiskers!

So today is Easter - Hallelujah, He is Risen... He is Risen indeed!  We would normally have a big dinner but instead, we are a household of sickies, well, I am the sick one which means I do not want to cook today and since we were just with our family, I let the kids choose.  They chose blueberry pancakes.  I had to take this opportunity to make at least one bunny pancake so that I could have something to add to my blog.  I did make the pancakes purple, which is kind of hard to see.  I first placed a blueberry on the pan for each eye and the nose and then I cut banana saltwater taffy into strips and placed them around the nose for their whiskers.  I then just made a circle for the head and added some ears.  The saltwater taffy totally melted and they made indents into the pancakes.  I ended up making 2 bunnies, one for each of my munchkins!  Super easy and very cute!

Peanut Butter Easter Rabbit Treat

Chocolate Peanut Butter Bunny

If you want to know the recipe to make these, look at my Peanut Butter Easter eggs.  I used the exact same peanut butter and icing sugar recipe but used a bunny rabbit cookie cutter.  I decorated one for each of my kids.  They loved them, of course!

Bunny Krispie Treat

The final bunny before my son decorated it!

I had some leftover pink candy melts from a previous treat and it had already been melted so... I looked in my pantry and realized that I still had some Krispie cereal left.  I re-melted the candy melts and mixed in the cereal.  I used my rabbit cookie cutter and I just spooned some of the mixture into the cookie cutter and spread it out to fill the entire cutter.  I lifted the cookie cutter and since it held its' shape, I could just make another one!  I decided to not decorate these bunnies and let my kids decorate them.  I gave each of them a small amount of pink icing, coloured sugar and confetti dots.  I only got a picture of my sons because my daughter decided to eat hers before I got a picture.

Bunny Rabbit Pita Sandwich

Pita Bunny Sandwich
I think I got the idea for this lunch from familyfun.com but I tweaked it so my kids would eat it.  The one I originally saw was a white bunny but my son does not like cream cheese so I made a brown bunny with peanut butter.  The main part of this is 2 pitas, one cut in half for the ears.  The inner part of the ear was raspberry jam.  The eyes and nose were dried cranberries and then rod pretzels for the whiskers.  Super easy and quick to make but much more fun to eat than a regular sandwich!

PEEP on a Stick

PEEP on a stick covered in candy melts

PEEP on a stick with some simple add-ons

My son was home sick today so my daughter and I decided to 'art' and make a fun snack, of course.  I had Peeps from the Dollar Tree so I decided to add even more sugar and make it a Peep on a stick.  I just dipped the stick in the candy melts, put the Peep on the stick, put it in the fridge for a bit and then dipped them in the candy melts.  For the pink ones I added some white sugar granules for the inside of the ears and black confetti dots for the eyes.  You could use edible markers to add a little mouth too.  Then my daughter told me to keep some blue, so I did.  Instead of dipping them in pink I just put the black confetti dots on top of where the Peep eyes already were (by using dots of candy melts as 'glue') and then I painted a small strip of the candy melts inside the ears and sprinkled some sugar on it.  These treats would actually be perfect for an Easter time baby shower if you do not have kids in the house to enjoy them.  Super easy and quick to make and it dresses up your basic Peep.
