| Mexican flag meringue! |
No, I am not Mexican, I am not even American, but my kids are and we celebrate Cinco De Mayo in our area so I wanted to make a fun snack for the day. I tried to make macaroons but they really ended up to be meringues with some coconut in them. Apparently you have to pack coconut when measuring it! At least my hubby thinks they taste good:) I chose these cookies because they are actually white and would work perfect for the white stripe in the middle of the flag. I then had coloured white chocolate to dip each side of the meringue in so that the final meringue represents a Mexican flag. Pretty simple to make and festive!
